What to have for dinner when your husband's not home and you want something more than a can of spaghettios

Our situation at home is such that I find myself eating at home alone at least one night of the week. If you're tempted to feel sorry for me, please do not. No offense to my husband, but this is usually my favorite night of the week. I get a few chores done, eat whatever I want for dinner, and watch whatever I want on TV afterwards. And I can lay around in whatever ugly clothes I want to all the while! :)

Tonight, not to brag or anything, but I really outdid myself on dinner. I think I created my new favorite mashed potato recipe. I'm not sure I would enjoy it as much if there were other things on the plate. It's pretty rich. But if you're up to just a couple of mashed potatoes for dinner, this is awesome!!

4 medium-to-small red potatoes, washed, halfway peeled, and cubed
1 clove of garlic, sliced haphazardly
1 TBSP butter
1 heaping TBSP of sour cream

Boil the potatoes in salted water until they're good and soft (20 minutes). Drain the water. Transfer to another bowl. In the same pot, melt your butter and add the garlic. While the garlic is simmering (for just a minute or two), mash the potatoes coarsely with the sour cream. Then pour the butter into the potatoes, straining out the garlic. Salt and pepper to taste. And inhale. That's what I did!

Mmmm. Potatoes are my favorite! I might have to try this one night. :)

Maybe tomorrow since tomorrow is lazy dinner night which is usually frozen food. Potatoes would be much better!
 
That sounds delicious! And I know what you mean about having a night to oneself-- it's nice to be selfish for a few hours! :)
 
Hehe, I love having the freedom to eat what I want and not worry about cooking for the family ;-)

That sounds like a dish worth traveling all the way to Charleston to sample! Maybe we'll have to arrange something.
